Mark Bittman on how to cook vegan, when all you want is meat
If you’re trying to eat less meat for any reason, but can’t quite get on the vegan train, Mark Bittman has you covered with creative plant-based fare. His new recipes don’t try to make up for meat with imitations, instead they celebrate vegetables in a way that can ease any meat lover into eating healthier.
Bittman, author of the beloved 1998 cookbook [“How To Cook Everything”, joined SalonTV’s Manny Howard on “Salon Talks” to discuss his latest effort, “Dinner for Everyone: 100 Iconic Dishes Made 3 Ways Easy, Vegan, or Perfect for Company”.
In the book, Bittman assembles recipes in utilitarian troikas that have a soothing effect, giving the reader the reasonable impression that, for tonight’s meal at least, anything is possible.
