Mom Buchanan's hamburger-potato goulash

My mother's child of necessity.

Dear Jenn,

The recipe is really simple. You can vary the amounts according to preference. Just be sure that one ingredient doesn't overwhelm the others.

Hamburger -- about a pound, or whatever you have on hand.

Potatoes -- peeled or use the thin-skinned kind. Slice 'em.

Oil for frying taters.

Ketchup.

Crumble burger and brown all the way through in a large skillet or Dutch oven. Meanwhile, fry up sliced potatoes in hot oil in similar large pot/pan. Be sure they are cooked through and fork-tender. Remove potatoes from the oil mush and combine with browned hamburger. Coat all with desired amount of ketchup. Voilà!

I invented the recipe. It was the child of necessity. We didn't have the money to just sashay to the grocery store to buy on whims. We had to use whatever was at hand and come up with something.

Love,

Mom Buchanan
