(Makes approximately 6 servings.)
- 1/4 cup freshly squeezed orange juice
- 1 tablespoon raspberry vinegar
- 1 tablespoon honey
- 2 tablespoons plain yogurt
- 1 tablespoon olive oil
- 1/4 cup fresh or thawed frozen raspberries
- 1/8 teaspoon salt
- 1/2 teaspoon freshly ground black pepper
- Blend the juice, vinegar, honey, yogurt and oil in a blender or food processor.
- Add the raspberries, salt and pepper and "pulse" them until mixed.
