Watermelon-feta salad

A sweet-and-salty Mediterranean favorite that you'll never get enough of

I don't remember where I originally saw this recipe, but it is simple, delicious and refreshing on a hot summer day. There are no exact measurements, which is part of the beauty of the dish -- anyone can make it with ease. It can be served on a plate as in the photograph, but to make it more elegant, I have served it in a martini glass both as a first course and as a dessert. It is a versatile addition to any menu.

Watermelon-feta salad

Ingredients

  • Watermelon, cut into cubes
  • Feta cheese, crumbled
  • Mint leaves, chiffonade (roll and cut thin so they're in threads.)
  • Lime

Directions

  1. Put watermelon cubes in a bowl. Sprinkle crumbled feta cheese and mint over the top. Squeeze a lime wedge over all.
