Melissa Clark has just written a second cookbook dedicated to the artful and practical use of The Instant Pot. In "Comfort in an Instant: 75 Recipes for Your Pressure Cooker, Multi-Cooker and Instant Pot", this accomplished author of over four dozen cookbooks bends her considerable talents to harnessing impossibly quick cooking in this season's hottest kitchen appliance.

Clark's guide helps the organized cook and the not-so-organized cook make use of the Instant Pot. On this episode of "Salon Talks," Clark explained to SalonTV's Manny Howard the best and worst ways to use this countertop multi-tool, including words to the wise about what Instant Pot accessories and attachments to look out for, which ones work, and which ones aren't worth the money.

"The first book was 'Dinner in an Instant.' And that was when I was like, 'Oh, what can I do with this thing?' And I was pushing it to its limits," Clark said, referencing an involved Persian crispy rice dish, tahdig, which she mastered in the Instant Pot.

With the second cookbook, "Comfort in an Instant," Clark plays on the fact that people love the Instant Pot for its convenience and its speed. "Most of the recipes are after-work-friendly recipes that will come together in 30 minutes or less," she said.
