“A great pastry isn’t just sweet”: How to add lemony, bright tastes to baked goods

Baker Natasha Pickowicz talks about the importance of seasoning pastry and what working in a professional kitchen taught her about being more inventive with ingredients. "A great pastry isn't just sweet," she said on this episode of "Salon Talks." "Something like sugar actually has the effect of dulling our perception of an ingredient. If a jam is too sweet, you're like, this tastes flat… but you add a little lemon juice and you're like, oh, this tastes incredible now."
