Will Horowitz brings his taste for outdoor adventure to New York’s Ducks Eatery


Nature enthusiast and restaurateur Will Horowitz is focusing on building a lifestyle around sustainable and survivalist eating. And it’s no surprise that the East Village restaurant he co-owns, Ducks Eatery, is focused on those exact tenets. Horowitz described his love for the eclectic and naturalist style to Salon’s Manny Howard on “Salon Talks.”

“It's this idea that we're able to really walk in the woods and say, how are these different faunas and trees, and topsoil, how is this all working together?” Horowitz said. And it’s through these ideas that Horowitz was inspired to create his restaurants. He explained, “How do we take those examples and apply it to a garden at home, a restaurant, a food system, or maybe the entire world?”

His latest half-cookbook, half-manifesto, “Salt Smoke Time,” is a guide for how to return to nature for nourishment. Horowitz describes techniques for preserving, smoking, curing, foraging and more.

Above all, Horowitz is focused on the philosophy of “not letting a single grain go to waste, and really adding value to whatever we can get our hands on.”
