Investors love meatless meat, but is this celebrity chef buying into the craze?

What does José Andrés think about the rapidly expanding business of non-meat proteins and the plant-based burger on everyone's radar, the Impossible Burger? The James Beard Award-winning chef wants to give it a chance. The world-renowned chef joined "Salon Talks" to share his favorite recipes from his latest cookbook "Vegetables Unleashed", which puts plants at the center of every dish.

When asked about the rise in popularity of the Impossible Burger, (like its arrival at Burger King this year) Andrés' concern lies more its impact on the environment and the food industry. "Anything that leads to create more vegetables or things that come from the vegetable world I think is very smart," Andrés told SalonTV's Manny Howard.

But Andrés urged everyone to ask these key questions when considering non-meat options, or any food product: "Is good for you, is it good for your community, is good for your children, is good for the land?"

Andrés wants to believe that companies like Impossible Foods are creating products to better the environmental impact of the foods that are produced. He said, "I believe that we need to give a chance to these new companies that they are trying to bring."

But at the same time, Andrés warned, "We need to be asking those companies to be very open in the way that they use those ingredients and the way they produce."
